Method
 

  1. Step 1: Cook the Pasta: Begin by bringing a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until it reaches an al dente texture. Once cooked, drain the pasta in a colander and rinse it under cold water.
  2. Step 2: Prepare the Vegetables: While the pasta is cooking, wash the cherry tomatoes and cut them in half. Peel and dice the cucumber, finely chop the red onion and fresh parsley.
  3. Step 3: Combine the Ingredients: In a large mixing bowl, combine the cooled pasta, halved cherry tomatoes, diced cucumber, finely chopped red onion, and parsley. Toss the ingredients together until evenly mixed.
  4. Step 4: Make the Dressing: In a separate small bowl, whisk together olive oil, Dijon mustard, fresh lemon juice, lemon zest, salt, and pepper. Adjust seasoning to taste.
