For the Taco Salad
  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 head romaine lettuce chopped
  • 1 cup cherry tomatoes halved
  • 1 cup black beans drained and rinsed
  • 1 cup corn canned or frozen
  • 1 cup shredded cheddar cheese
  • 1 cup tortilla chips crushed
  • 1 cup Catalina dressing

Method
 

  1. Step 1: In a large skillet over medium heat, add the ground beef. Cook until browned, approximately 5-7 minutes, and drain any excess fat.
  2. Step 2: Add the taco seasoning to the skillet and follow the package instructions. Stir well and allow to simmer for a few minutes.
  3. Step 3: In a large mixing bowl, combine chopped romaine lettuce, cherry tomatoes, black beans, corn, and shredded cheddar cheese. Toss gently.
  4. Step 4: Add the cooked ground beef to the salad mixture and toss gently to combine.
  5. Step 5: Just before serving, sprinkle crushed tortilla chips over the salad and drizzle with Catalina dressing. Toss lightly and serve immediately.

Notes

For a vegetarian option, replace ground beef with lentils or black bean patties. For added nutrition, include diced avocado or bell peppers.
