  • 8 oz rotini pasta
  • 1 cup cherry tomatoes halved
  • 1 cup black beans rinsed and drained
  • 1 cup corn canned or frozen
  • 1 cup shredded cheddar cheese
  • 1 cup diced bell peppers any color
  • 1 cup diced red onion
  • 1 cup ranch dressing
  • 1 packet taco seasoning
  • 2 cups crushed Doritos
  • Fresh cilantro for garnish (optional)

Method
 

  1. Step 1: Begin by boiling a large pot of water. Once it reaches a rolling boil, add the 8 ounces of rotini pasta. Cook according to the package instructions, usually around 8-10 minutes, until al dente.
  2. Step 2: After the pasta is cooked, carefully drain it in a colander. Rinse it under cold running water.
  3. Step 3: While the pasta is cooling, chop the cherry tomatoes, bell peppers, and red onion.
  4. Step 4: In a large mixing bowl, combine the cooled pasta, chopped cherry tomatoes, black beans, corn, shredded cheddar cheese, diced bell peppers, and red onion.
  5. Step 5: In a separate bowl, mix 1 cup of ranch dressing with the packet of taco seasoning. Stir until well combined.
  6. Step 6: Pour the dressing over the pasta salad mixture. Toss gently to ensure that all the ingredients are evenly coated.
  7. Step 7: Just before serving, add the 2 cups of crushed Doritos to the salad. Gently fold them in to maintain their crunch.
  8. Step 8: If desired, garnish your salad with fresh cilantro. Serve immediately.

Notes

Store the salad in the refrigerator without the Doritos and add them just before serving to keep them crispy.
