- Step 1: Preheat your oven to 350°F (175°C) and line your muffin tin with paper liners or spray with non-stick spray.
- Step 2: In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, ginger, nutmeg, and salt.
- Step 3: In a large mixing bowl, cream the butter, brown sugar, and granulated sugar until light and fluffy.
- Step 4: Beat in the eggs one at a time, then mix in the molasses until fully blended.
- Step 5: Gradually add the dry ingredients to the wet mixture, stirring gently until just combined.
- Step 6: Fold in the diced apples and walnuts if using.
- Step 7: Fill the muffin cups about two-thirds full with batter.
- Step 8: Bake for 18-22 minutes or until a toothpick inserted comes out clean.
- Step 9: Allow muffins to cool in the pan for 5 minutes before transferring to a wire rack.
Notes
These muffins can be stored in an airtight container for a few days, but they’re at their best fresh out of the oven.
