  • 1 cup corn kernels fresh, frozen, or canned
  • 1 cup diced tomatoes
  • 1 whole jalapeño finely chopped, seeds removed for less heat
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tbsp lime juice
  • Salt and pepper to taste
  • 0.25 cup chopped fresh cilantro optional
For serving

Method
 

  1. Step 1: In a large mixing bowl, combine the drained and rinsed black beans, corn kernels, diced tomatoes, and chopped jalapeño.
  2. Step 2: Sprinkle in the smoked paprika, garlic powder, onion powder, lime juice, salt, and pepper. Mix everything thoroughly.
  3. Step 3: If using cilantro, add it to the mixture and taste to adjust seasoning if necessary.
  4. Step 4: Serve immediately with tortilla chips or vegetable sticks, or refrigerate for about 30 minutes to meld flavors.
