  • 1 package (9 ounces) cheese tortellini
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1/2 cup red onion finely chopped
  • 1/2 cup black olives sliced
  • 1/4 cup fresh basil chopped
  • 1/4 cup olive oil
  • 2 tbsp red wine vinegar
  • Salt and pepper to taste

Method
 

  1. Step 1: Start by bringing a large pot of salted water to a boil. Add the cheese tortellini and cook according to the package instructions, usually around 3-5 minutes if using fresh tortellini.
  2. Step 2: Once the tortellini is cooked, carefully drain it in a colander. Rinse the pasta under cold water to stop the cooking process and cool it down quickly.
  3. Step 3: While the pasta is cooling, chop the cherry tomatoes in half, dice the cucumber, and finely chop the red onion. Slice the black olives and chop the fresh basil.
  4. Step 4: In a large mixing bowl, combine the cooled tortellini, halved cherry tomatoes, diced cucumber, chopped red onion, sliced black olives, and chopped basil. Gently toss the ingredients to ensure they are evenly distributed.
