- Step 1: Start by bringing a large pot of salted water to a boil. Add the cheese tortellini and cook according to the package instructions, usually around 3-5 minutes if using fresh tortellini.
- Step 2: Once the tortellini is cooked, carefully drain it in a colander. Rinse the pasta under cold water to stop the cooking process and cool it down quickly.
- Step 3: While the pasta is cooling, chop the cherry tomatoes in half, dice the cucumber, and finely chop the red onion. Slice the black olives and chop the fresh basil.
- Step 4: In a large mixing bowl, combine the cooled tortellini, halved cherry tomatoes, diced cucumber, chopped red onion, sliced black olives, and chopped basil. Gently toss the ingredients to ensure they are evenly distributed.
- Step 5: In a small bowl, whisk together the olive oil, red wine vinegar, salt, and pepper until well combined. Taste the dressing and adjust the seasoning if necessary.
- Step 6: Pour the dressing over the tortellini salad and toss gently to combine. Cover the salad with plastic wrap or transfer it to an airtight container and refrigerate for at least 30 minutes.
