- Step 1: Preheat the oven to 425°F (220°C).
- Step 2: In a large mixing bowl, combine smoked paprika, garlic powder, onion powder, salt, black pepper, and olive oil. Whisk together until well-combined.
- Step 3: Add the chicken drumsticks to the bowl with the marinade and toss until evenly coated. Let them sit for about 10-15 minutes.
- Step 4: In a separate bowl, toss the halved baby potatoes with olive oil, a pinch of salt, black pepper, and chopped rosemary if using.
- Step 5: Arrange the marinated chicken drumsticks and seasoned potatoes on a large sheet pan in a single layer.
- Step 6: Bake in the preheated oven for 35-40 minutes until the chicken is cooked through and the potatoes are golden brown.
- Step 7: Let the chicken and potatoes rest for a few minutes, then garnish with fresh parsley before serving.
