Ingredients

For the Pineapple
  • 1 whole fresh pineapple peeled, cored, and sliced into rings
  • 1 cup dark rum
  • 1/2 cup brown sugar
  • 1 tsp vanilla extract
For the Batter
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup coconut milk
For Frying
  • Oil for frying
Optional Garnish
  • Powdered sugar for garnish
  • Toasted coconut for garnish

Equipment

  • Large mixing bowl
  • Separate bowl
  • Deep skillet or fryer
  • Slotted spoon or tongs
  • Paper towels
  • Serving platter

Method

  1. Step 1: In a large bowl, combine the dark rum, brown sugar, and vanilla extract. Stir until the sugar is dissolved. Add the sliced pineapple rings to the mixture, ensuring they are fully submerged. Let them soak for at least 1 hour.
  2. Step 2: In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the coconut milk, stirring until a smooth batter forms.
  3. Step 3: In a deep skillet or fryer, heat about 2 inches of oil over medium heat.
  4. Step 4: Remove the soaked pineapple rings from the rum mixture, allowing any excess liquid to drip off. Dip each ring into the batter, ensuring it is well coated.
  5. Step 5: Carefully place the battered pineapple rings into the hot oil. Fry until they are golden brown, about 2-3 minutes on each side.
  6. Step 6: Once the pineapple rings are cooked, remove them from the oil using a slotted spoon and place them on paper towels to drain any excess oil. Serve warm, optionally garnished with powdered sugar or toasted coconut.

Notes

To enhance your Rum Soaked Fried Pineapple experience, consider adding a pinch of cinnamon or nutmeg to the batter for a warm, spiced flavor.
