  • 1 cup orzo pasta
  • 2 cups vegetable broth
  • 1 cup roasted red peppers, diced
  • 1 cup goat cheese, crumbled
  • 1 cup spinach, chopped
  • 1/2 cup cherry tomatoes, halved
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 cup grated Parmesan cheese

Method
 

  1. Step 1: Preheat your oven to 375°F (190°C).
  2. Step 2: In a medium saucepan, bring 2 cups of vegetable broth to a boil. Add 1 cup of orzo pasta and cook according to package instructions, typically around 8-10 minutes, until al dente. Drain and set aside.
  3. Step 3: In a large mixing bowl, combine the cooked orzo, 1 cup diced roasted red peppers, 1 cup crumbled goat cheese, 1 cup chopped spinach, 1/2 cup halved cherry tomatoes, 2 minced garlic cloves, 1 teaspoon dried oregano, 1 teaspoon salt, and 1/2 teaspoon black pepper. Stir until well combined.
  4. Step 4: Grease your baking dish with olive oil. Pour the orzo mixture into the dish, spreading it evenly.
  5. Step 5: Sprinkle 1/4 cup grated Parmesan cheese evenly over the top. Drizzle a little olive oil for extra flavor.
  6. Step 6: Bake in the preheated oven for 25-30 minutes, or until the top is golden and bubbly.
  7. Step 7: Remove from the oven and allow to cool slightly before serving.
