- Step 1: Preheat the oven to 400°F (200°C).
- Step 2: Slice off the top of the head of garlic and drizzle with olive oil.
- Step 3: Wrap the garlic head in aluminum foil.
- Step 4: Roast the garlic in the oven for 30-35 minutes until soft and caramelized.
- Step 5: Squeeze the roasted garlic into a mixing bowl.
- Step 6: Add sour cream and prepared horseradish to the bowl and mix until smooth.
- Step 7: Season with salt and pepper to taste.
- Step 8: Transfer to a serving dish and garnish with chives if desired.
- Step 9: Serve chilled or at room temperature.
Notes
This sauce can be made a day in advance. Store it in the refrigerator and let the flavors meld overnight!
