- Step 1: Preheat your oven to 450°F (230°C).
- Step 2: Generously season the rib roast with salt and pepper.
- Step 3: In a small bowl, combine olive oil, minced garlic, and chopped rosemary. Rub this mixture all over the rib roast.
- Step 4: Place the rib roast on a rack in a roasting pan and roast in the preheated oven for 20 minutes.
- Step 5: Lower the oven temperature to 325°F (165°C) and continue roasting for about 1.5 to 2 hours until desired doneness.
- Step 6: Let the roast rest for at least 15 minutes before slicing.
- Step 7: Prepare the sauce by combining sour cream, horseradish, Dijon mustard, and lemon juice in a separate bowl. Mix well.
- Step 8: Slice the roast and serve with the creamy horseradish sauce on the side.
