- Step 1: In a medium saucepan, combine 1 cup of chopped rhubarb, 1 cup of water, and 1/2 cup of sugar. Stir occasionally over medium heat until the sugar dissolves.
- Step 2: Increase the heat and bring the mixture to a boil. Once boiling, reduce the heat and let it simmer for about 10 minutes or until the rhubarb becomes soft.
- Step 3: After simmering, remove the saucepan from heat and allow the mixture to cool. Strain the cooled mixture into a pitcher to separate the liquid from the rhubarb solids.
- Step 4: Stir in 1 tablespoon of rosewater and 1 tablespoon of lemon juice into the strained liquid.
- Step 5: To serve, fill a glass with ice cubes. Pour the rhubarb mixture over the ice, filling the glass about two-thirds full.
- Step 6: Carefully top off the glass with sparkling water. Garnish your mocktail with fresh mint leaves.
Notes
For a more intense flavor, you can let the rhubarb mixture steep longer before straining. Additionally, feel free to experiment with other herbs like basil or thyme for a unique twist.
