Ingredients
  

For the crust
  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter softened
  • 1/4 teaspoon salt
For the filling
  • 2 cups rhubarb chopped
  • 1 cup granulated sugar
  • 1/4 cup all-purpose flour
  • 1 teaspoon vanilla extract
  • 1 package cream cheese softened (8 oz)

Method
 

  1. Step 1: Preheat your oven to 350°F (175°C) and grease your baking pan.
  2. Step 2: In a mixing bowl, combine flour, sugar, butter, and salt. Mix until crumbly and press into the bottom of the prepared baking pan. Bake for 15 minutes or until lightly golden.
  3. Step 3: Prepare the rhubarb filling by mixing chopped rhubarb, sugar, and flour in a bowl until well coated.
  4. Step 4: In another bowl, beat cream cheese, egg, and vanilla until smooth.
  5. Step 5: Spread rhubarb mixture over the crust, then pour cream cheese mixture over it, spreading evenly.
  6. Step 6: Bake for an additional 30-35 minutes or until the cream cheese layer is set and lightly browned.
  7. Step 7: Allow to cool completely in the pan on a cooling rack. Cut into squares and serve.

Notes

These bars can be made a day in advance. Store in an airtight container in the refrigerator for up to a week.
