Method
- Step 1: Preheat your oven to 350°F (175°C) and grease your baking pan.
- Step 2: In a mixing bowl, combine flour, sugar, butter, and salt. Mix until crumbly and press into the bottom of the prepared baking pan. Bake for 15 minutes or until lightly golden.
- Step 3: Prepare the rhubarb filling by mixing chopped rhubarb, sugar, and flour in a bowl until well coated.
- Step 4: In another bowl, beat cream cheese, egg, and vanilla until smooth.
- Step 5: Spread rhubarb mixture over the crust, then pour cream cheese mixture over it, spreading evenly.
- Step 6: Bake for an additional 30-35 minutes or until the cream cheese layer is set and lightly browned.
- Step 7: Allow to cool completely in the pan on a cooling rack. Cut into squares and serve.
Notes
These bars can be made a day in advance. Store in an airtight container in the refrigerator for up to a week.
