- Step 1: Preheat your oven to 375°F (190°C).
- Step 2: In a large mixing bowl, combine the chopped rhubarb, sliced apples, granulated sugar, lemon juice, cinnamon, and cornstarch. Mix well until all the fruit is evenly coated.
- Step 3: Roll out the pie crust gently and fit it into your tart pan. Make sure to press it into the edges and corners.
- Step 4: Pour the rhubarb and apple filling into the prepared crust, spreading it evenly.
- Step 5: Using a pastry brush, gently brush the edges of the crust with the beaten egg.
- Step 6: Bake the tart in the preheated oven for 45-50 minutes, or until the fruit is bubbling and the crust is golden brown.
- Step 7: Once baked, remove the tart from the oven and let it cool for at least 15 minutes before serving.
