Ingredients
  

For the Tart
  • 2 cups rhubarb chopped
  • 2 cups apples peeled and sliced
  • 1 cup granulated sugar
  • 1 tbsp lemon juice
  • 1 tsp cinnamon
  • 2 tbsp cornstarch
  • 1 egg beaten for egg wash

Method
 

  1. Step 1: Preheat your oven to 375°F (190°C).
  2. Step 2: In a large mixing bowl, combine the chopped rhubarb, sliced apples, granulated sugar, lemon juice, cinnamon, and cornstarch. Mix well until all the fruit is evenly coated.
  3. Step 3: Roll out the pie crust gently and fit it into your tart pan. Make sure to press it into the edges and corners.
  4. Step 4: Pour the rhubarb and apple filling into the prepared crust, spreading it evenly.
  5. Step 5: Using a pastry brush, gently brush the edges of the crust with the beaten egg.
  6. Step 6: Bake the tart in the preheated oven for 45-50 minutes, or until the fruit is bubbling and the crust is golden brown.
  7. Step 7: Once baked, remove the tart from the oven and let it cool for at least 15 minutes before serving.
