  • 3 tbsp olive oil
  • 3 tbsp kosher salt
  • 1 tbsp black pepper
  • 4 cloves garlic minced
  • 2 tbsp fresh rosemary chopped
  • 2 tbsp fresh thyme chopped
  • 1 tbsp Dijon mustard

Method
 

  1. Step 1: Preheat your oven to 450°F (230°C).
  2. Step 2: In a small mixing bowl, combine olive oil, kosher salt, black pepper, minced garlic, chopped rosemary, chopped thyme, and Dijon mustard to create a flavorful paste.
  3. Step 3: Pat the prime rib roast dry with paper towels and rub the herb paste evenly over the entire surface of the roast.
  4. Step 4: Place the prepared roast bone-side down on a rack inside a roasting pan.
  5. Step 5: Roast the prime rib in the preheated oven for 20 minutes.
  6. Step 6: Reduce the oven temperature to 325°F (165°C) and continue roasting for approximately 1.5 to 2 hours, or until the internal temperature reaches 130°F (54°C) for medium-rare.
  7. Step 7: Once the roast reaches the desired temperature, remove it from the oven and tent it loosely with aluminum foil. Allow it to rest for 20-30 minutes.
