  • 2 cups grated zucchini about 2 medium zucchini
  • 1 cup granulated sugar
  • 1/2 cup brown sugar packed
  • 1/2 cup vegetable oil
  • 1/2 cup unsweetened applesauce
  • 3 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup chopped nuts or chocolate chips optional

Method
 

  1. Step 1: Preheat your oven to 350°F (175°C). Grease and flour your 9x5 inch loaf pan.
