For the Salad
  • 8 oz pasta rotini or penne
  • 1 cup cherry tomatoes halved
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1 cup black beans drained and rinsed
  • 1 each bell pepper diced (any color)
  • 1/4 cup red onion finely chopped
  • 1/4 cup cilantro chopped
  • 1/2 cup shredded cheese (cheddar or Mexican blend)
For the Dressing
  • 1/4 cup olive oil
  • 2 tbsp lime juice
  • 1 tsp chili powder
  • Salt and pepper

Method
 

  1. Step 1: Cook the pasta in a large pot of salted water according to package instructions until al dente, about 8-10 minutes. Stir occasionally to prevent sticking.
  2. Step 2: Drain the pasta in a colander and rinse it under cold water to cool it down. Transfer to a large mixing bowl.
  3. Step 3: While the pasta is cooking, chop the cherry tomatoes, bell pepper, red onion, and cilantro. Add them to the mixing bowl with the cooled pasta.
  4. Step 4: Add the black beans and shredded cheese to the mixing bowl, mixing gently to combine.
  5. Step 5: In a small bowl, whisk together the olive oil, lime juice, chili powder, salt, and pepper to create the dressing.
  6. Step 6: Pour the dressing over the pasta and vegetable mixture and toss gently until well coated.
  7. Step 7: Cover and refrigerate the salad for at least 30 minutes to allow the flavors to meld. Serve chilled.

Notes

For a creamier texture, consider incorporating some sour cream or Greek yogurt into the dressing. Make sure to taste the salad before serving and adjust the seasoning as necessary.
