- Step 1: Preheat your oven to 375°F (190°C).
- Step 2: In a large skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic. Sauté for about 3-5 minutes, or until the onion becomes translucent.
- Step 3: Stir in the chopped spinach and cook until it wilts, about 2-3 minutes. Season with oregano, basil, salt, and pepper.
- Step 4: In a separate large pot, bring the vegetable broth to a boil. Add the orzo and cook according to package instructions until al dente, usually around 8-10 minutes. Drain any excess liquid.
- Step 5: In a large mixing bowl, combine the cooked orzo, sautéed spinach mixture, halved cherry tomatoes, and crumbled feta cheese. Mix well.
- Step 6: Grease your baking dish with olive oil. Pour the orzo mixture into the dish, spreading it out evenly. Sprinkle with Parmesan cheese if using.
- Step 7: Bake for 25-30 minutes, or until heated through and top is slightly golden.
- Step 8: Remove from oven and let it cool for a few minutes before serving.
