Ingredients

For the Mediterranean Spinach & Feta Orzo Bake
  • 1 cup orzo pasta
  • 2 cups vegetable broth
  • 2 cups fresh spinach, chopped
  • 1 cup feta cheese, crumbled
  • 1 cup cherry tomatoes, halved
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1/4 cup grated Parmesan cheese (optional)

Equipment

  • Large Skillet
  • Large pot
  • Baking dish (9x13 inches recommended)
  • Mixing bowl
  • Wooden spoon or spatula
  • Measuring cups and spoons
  • Sharp Knife and Cutting Board

Method

  1. Step 1: Preheat your oven to 375°F (190°C).
  2. Step 2: In a large skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic. Sauté for about 3-5 minutes, or until the onion becomes translucent.
  3. Step 3: Stir in the chopped spinach and cook until it wilts, about 2-3 minutes. Season with oregano, basil, salt, and pepper.
  4. Step 4: In a separate large pot, bring the vegetable broth to a boil. Add the orzo and cook according to package instructions until al dente, usually around 8-10 minutes. Drain any excess liquid.
  5. Step 5: In a large mixing bowl, combine the cooked orzo, sautéed spinach mixture, halved cherry tomatoes, and crumbled feta cheese. Mix well.
  6. Step 6: Grease your baking dish with olive oil. Pour the orzo mixture into the dish, spreading it out evenly. Sprinkle with Parmesan cheese if using.
  7. Step 7: Bake for 25-30 minutes, or until heated through and top is slightly golden.
  8. Step 8: Remove from oven and let it cool for a few minutes before serving.
