- Step 1: Preheat the oven to 375°F (190°C).
- Step 2: In a medium saucepan, bring 2 cups of vegetable broth to a boil. Add 1 cup of orzo pasta and cook according to package instructions until al dente, about 8-10 minutes. Drain and set aside.
- Step 3: In a large mixing bowl, combine 1 cup of ricotta cheese, 1 cup of grated Parmesan cheese, the zest and juice of 1 lemon, 1 tablespoon of olive oil, 2 cloves of minced garlic, 1 teaspoon of dried thyme, 1 teaspoon of dried oregano, and salt and pepper to taste. Mix thoroughly.
- Step 4: Gently fold the cooked orzo into the cheese mixture until well combined.
- Step 5: Grease your baking dish and pour in the orzo mixture, spreading it evenly.
- Step 6: Bake in the preheated oven for 25-30 minutes, or until the top is golden and bubbly.
- Step 7: Let cool for a few minutes, then garnish with fresh herbs if desired before serving.
Notes
This baked orzo can be made ahead of time and reheats well. Add sautéed vegetables or protein for extra nutrition.
