- Step 1: Preheat your oven to 375°F (190°C).
- Step 2: In a large skillet, heat olive oil over medium heat.
- Step 3: Add minced garlic and sauté for about 1 minute, or until fragrant.
- Step 4: Stir in orzo pasta and mix well to coat it in the garlic and oil.
- Step 5: Pour in vegetable broth and bring to a boil. Once boiling, reduce heat and let simmer for about 8-10 minutes.
- Step 6: Remove from heat and add ricotta cheese, grated Parmesan, lemon zest, lemon juice, oregano, thyme, salt, and pepper. Stir together until well combined.
- Step 7: Grease your baking dish and pour the orzo mixture into the dish, spreading it out evenly.
- Step 8: Bake for 20-25 minutes, or until the top is golden and bubbly.
- Step 9: Remove from the oven and let cool for a few minutes. Garnish with fresh herbs before serving.
Notes
For a vegan version, opt for plant-based ricotta and nutritional yeast instead of Parmesan.
