- Step 1: Preheat your oven to 375°F (190°C).
- Step 2: In a mixing bowl, combine spinach, artichoke hearts, cream cheese, mozzarella cheese, Parmesan cheese, minced garlic, onion powder, garlic powder, salt, and pepper. Mix well until creamy.
- Step 3: Cut a pocket into each chicken breast. Be careful not to cut all the way through.
- Step 4: Stuff each chicken breast pocket with the creamy filling.
- Step 5: Heat olive oil in a skillet over medium-high heat and sear the stuffed chicken breasts for about 3-4 minutes on each side until golden brown.
- Step 6: Transfer the chicken to a baking dish and bake for 20-25 minutes. Use a meat thermometer to check for doneness; the internal temperature should reach 165°F (75°C).
- Step 7: Let the chicken rest for a few minutes before serving.
