- Step 1: Preheat your oven to 350°F (175°C) and prepare your muffin tin.
- Step 2: In a medium bowl, whisk together the dry ingredients: flour, baking soda, ginger, cinnamon, cloves, and salt.
- Step 3: In a large mixing bowl, cream together the butter and honey until light and fluffy.
- Step 4: Add the eggs one at a time, then stir in the molasses, buttermilk, and vanilla extract until well combined.
- Step 5: Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined.
- Step 6: Fill the muffin cups about two-thirds full with batter.
- Step 7: Bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean.
- Step 8: Cool in the tin for 5 minutes before transferring to a wire rack to cool completely.
