Ingredients

For the Honey-Roasted Peanut Buckeye Bars
  • 1 cup honey-roasted peanuts chopped
  • 1 cup creamy peanut butter
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 cups graham cracker crumbs
  • 1 cup milk chocolate chips
  • 2 tablespoons coconut oil

Equipment

  • Large mixing bowl
  • 9x9 inch baking pan
  • Spatula or spoon
  • Microwave-safe bowl
  • Refrigerator

Method

  1. Step 1: In a large mixing bowl, combine the chopped honey-roasted peanuts, creamy peanut butter, powdered sugar, and vanilla extract. Mix until well combined.
  2. Step 2: Gradually stir in the graham cracker crumbs until the mixture is evenly blended.
  3. Step 3: Press the mixture firmly into the bottom of a greased 9x9 inch baking pan.
  4. Step 4: In a microwave-safe bowl, combine the milk chocolate chips and coconut oil. Microwave in 30-second intervals, stirring between each, until melted and smooth.
  5. Step 5: Pour the melted chocolate over the peanut butter layer in the baking pan, spreading it evenly with a spatula.
  6. Step 6: Refrigerate the bars for at least 2 hours or until the chocolate is set.
  7. Step 7: Once set, use a sharp knife to cut the bars into squares or rectangles.

Notes

Keep the bars in an airtight container in the refrigerator to maintain their freshness. They can also be frozen for longer storage; just be sure to layer them with parchment paper to prevent sticking.
