Ingredients
  

For the Pasta Salad
  • 8 oz pasta your choice; penne, fusilli, or rotini work well
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1/2 cup bell pepper diced (any color)
  • 1/4 cup red onion finely chopped
  • 1/2 cup black olives sliced
  • 1/2 cup feta cheese crumbled
  • 1/4 cup olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp dried oregano
  • Salt and Pepper to taste
  • Fresh basil leaves for garnish (optional)

Method
 

  1. Step 1: Begin by bringing a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until it’s al dente. This usually takes around 8-10 minutes. Drain it in a colander and rinse under cold water.
  2. Step 2: While the pasta is cooling, prepare your vegetables: chop the cherry tomatoes in half, dice the cucumber and bell pepper, and finely chop the red onion.
  3. Step 3: In a large mixing bowl, combine the cooled pasta with the chopped vegetables: cherry tomatoes, cucumber, bell pepper, red onion, and sliced black olives. Add the crumbled feta cheese and gently toss everything together.
  4. Step 4: In a small bowl, whisk together the olive oil, red wine vinegar, dried oregano, salt, and pepper. Pour the dressing over the pasta mixture and toss everything together again.
  5. Step 5: For the best flavor, refrigerate the pasta salad for at least 30 minutes before serving. Check for seasoning and adjust as needed. Garnish with fresh basil leaves if desired.

This pasta salad can be made in advance and stored in the refrigerator, making it a great option for meal prepping.
