- Step 1: Chop the cabbage into bite-sized pieces.
- Step 2: Prepare the vegetables by halving the cherry tomatoes, draining canned corn, or thawing frozen corn, and dicing the red onion.
- Step 3: In a large mixing bowl, combine chopped cabbage, halved cherry tomatoes, corn, shredded cheddar cheese, and diced red onion, and toss gently.
- Step 4: In a separate bowl, whisk together ranch dressing and lime juice, seasoning with salt and pepper.
- Step 5: Pour the dressing over the salad mixture and gently toss to coat.
- Step 6: Just before serving, sprinkle Fritos over the top.
- Step 7: Serve immediately or refrigerate for up to one hour.
