- Step 1: Begin by bringing a large pot of salted water to a boil. Once boiling, add the 12 oz of fresh tortellini. Cook according to the package instructions, usually about 3-5 minutes, until the tortellini is al dente. Drain the tortellini using a colander and rinse under cold water to stop the cooking process.
- Step 2: While the tortellini is cooking, prepare your vegetables. Dice the cucumber, bell pepper, and thinly slice the red onion. Halve the cherry tomatoes and slice the black olives. Set all the chopped vegetables aside in a large mixing bowl.
- Step 3: Once the tortellini has cooled, add it to the bowl with the diced vegetables. Next, add 1/2 cup of crumbled feta cheese and 1/4 cup of chopped fresh basil.
- Step 4: In a separate small bowl, whisk together 1/4 cup of olive oil, 2 tablespoons of red wine vinegar, and 1 teaspoon of dried oregano. Season with salt and pepper to taste.
- Step 5: Pour the dressing over your salad mixture and toss gently to combine. Ensure that all ingredients are well-coated with the dressing.
