  • 1 medium onion chopped
  • 1 red bell pepper diced
  • 3 cloves garlic minced
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1 can diced tomatoes 14 oz
  • 4 large eggs
  • 1/2 cup feta cheese crumbled

Method
 

  1. Step 1: In a large skillet, heat olive oil over medium heat. Add the chopped onion and diced red bell pepper. Sauté for about 5 minutes, or until the vegetables are softened.
  2. Step 2: Stir in minced garlic, ground cumin, and smoked paprika. Cook for an additional 1-2 minutes until fragrant.
  3. Step 3: Pour in the diced tomatoes, season with salt and pepper, and let it simmer for about 10 minutes.

Notes
