- Step 1: In a large skillet, heat olive oil over medium heat. Add the chopped onion and diced red bell pepper. Sauté for about 5 minutes, or until the vegetables are softened.
- Step 2: Stir in minced garlic, ground cumin, and smoked paprika. Cook for an additional 1-2 minutes until fragrant.
- Step 3: Pour in the diced tomatoes, season with salt and pepper, and let it simmer for about 10 minutes.
- Step 4: Create small wells in the sauce and crack the eggs into each well. Cover and cook for 5-7 minutes until the whites are set.
- Step 5: Sprinkle crumbled feta cheese on top and garnish with fresh parsley or cilantro before serving.
Notes
For a vegan version, replace eggs with silken tofu. You can also add more vegetables like zucchini or spinach for added nutrition.
