- Step 1: Preheat your oven to 350°F (175°C).

- Step 3: In a large mixing bowl, combine the grated zucchini, honey, vegetable oil, eggs, and vanilla extract. Whisk these ingredients together until well mixed.
- Step 4: In a separate medium mixing bowl, whisk together the all-purpose flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
- Step 5: Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. If using nuts, fold them in gently.
- Step 6: Pour the batter into the prepared loaf pan, spreading it out evenly with a spatula.
- Step 7: Bake the bread in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Step 8: Allow the bread to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
