  • 2 cups grated zucchini about 2 medium zucchinis
  • 1/2 cup honey
  • 1/3 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1.5 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 cup chopped nuts optional; walnuts or pecans work well

Method
 

  1. Step 1: Preheat your oven to 350°F (175°C).
  2. Step 2: Grease a 9x5-inch loaf pan with butter or cooking spray.
  3. Step 3: In a large mixing bowl, combine the grated zucchini, honey, vegetable oil, eggs, and vanilla extract. Whisk these ingredients together until well mixed.
  4. Step 4: In a separate medium mixing bowl, whisk together the all-purpose flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
  5. Step 5: Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. If using nuts, fold them in gently.
  6. Step 6: Pour the batter into the prepared loaf pan, spreading it out evenly with a spatula.
  7. Step 7: Bake the bread in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
