  • 1 bag Doritos taco flavor or nacho cheese (9.75 oz)
  • 1 lb ground beef
  • 1 packet taco seasoning (about 1 oz)
  • 1 can black beans rinsed and drained (15 oz)
  • 1 cup corn (canned, frozen, or fresh)
  • 1 cup cherry tomatoes halved
  • 1 cup shredded lettuce
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1/2 cup sour cream
  • 1/2 cup salsa
Optional toppings

Method
 

  1. Step 1: In a large skillet over medium heat, add the ground beef. Brown the beef until fully cooked, about 7-10 minutes. Drain excess fat.
  2. Step 2: Add the taco seasoning to the skillet, following package instructions. Stir well and let it simmer.
  3. Step 3: In a large mixing bowl, combine black beans, corn, cherry tomatoes, shredded lettuce, and shredded cheese. Mix gently.
  4. Step 4: Allow beef to cool slightly, then add it to the bowl and fold everything together gently.
  5. Step 5: Open the bag of Doritos and crush the chips lightly in your hands. Fold them gently into the salad.
  6. Step 6: Serve immediately or chill. Offer sour cream and salsa on the side or drizzle over the top.

Notes

You can prepare the salad ahead of time. Just store the Doritos separately to maintain their crunch until you are ready to serve.
