- Step 1: Preheat the oven to 350°F (175°C).
- Step 2: Grease a 9x9-inch baking pan or line it with parchment paper.
- Step 3: In a mixing bowl, combine all-purpose flour, softened unsalted butter, granulated sugar, and salt until crumbly.
- Step 4: Press the mixture firmly into the bottom of the prepared baking pan.
- Step 5: Bake the crust for 15 minutes until lightly golden.
- Step 6: Prepare the filling by chopping the rhubarb and mixing it with granulated sugar. Let sit for 10 minutes.
- Step 7: In another bowl, whisk together eggs, lemon juice, lemon zest, and cornstarch until smooth.
- Step 8: Stir the rhubarb mixture into the egg mixture until well combined.
- Step 9: Pour the filling over the pre-baked crust and spread evenly.
- Step 10: Bake for an additional 25-30 minutes until filling is set and slightly golden.
- Step 11: Allow to cool completely in the pan, then dust with powdered sugar before cutting into bars.
Notes
These bars can be stored in an airtight container in the refrigerator for up to a week. They also freeze well, so you can make a batch ahead of time for later enjoyment.
