- Step 1: Preheat the oven to 350°F (175°C).
- Step 2: In a large pot, bring salted water to a boil. Add the cubed potatoes and cook until tender, about 15-20 minutes. Drain the potatoes in a colander and return them to the pot.
- Step 3: To the drained potatoes, add the sour cream, shredded cheddar cheese, crumbled bacon, chopped green onions, melted butter, garlic powder, salt, and pepper. Using a spatula or wooden spoon, mix everything together until well combined and creamy.
- Step 4: Transfer the potato mixture to a greased baking dish, spreading it out evenly.
- Step 5: Sprinkle the crushed potato chips evenly over the top of the potato mixture.
- Step 6: Place the baking dish in the preheated oven and bake for 25-30 minutes until the top turns golden and crispy.
- Step 7: Once baked, remove the dish from the oven and let it cool slightly before serving.

You can prepare the potato mixture ahead of time, store it in the refrigerator, and bake it just before serving for optimal freshness.
