Ingredients
  

For the Crispy Smashed Carrots Bites
  • 1 lb baby carrots fresh and firm
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
For seasoning
  • Salt and pepper
  • Fresh parsley

  • Pot for boiling water

  • Fork or bottom of a glass

Method
 

  1. Step 1: Preheat your oven to 425°F (220°C).
  2. Step 2: Place the baby carrots in a pot of boiling water. Cook them for 10-12 minutes or until they are tender but not mushy. Drain and allow to cool slightly.
  3. Step 3: Line a baking sheet with parchment paper. Arrange the carrots on the baking sheet and smash each carrot gently with a fork or the bottom of a glass.
  4. Step 4: Drizzle olive oil over the smashed carrots and sprinkle with garlic powder, smoked paprika, salt, and pepper.
  5. Step 5: Bake in the preheated oven for 20-25 minutes until the edges are crispy and golden brown.
  6. Step 6: Garnish with freshly chopped parsley and serve warm.

If you want extra crispiness, consider flipping the carrots halfway through baking.
