- Step 1: Cook the rotini pasta in a large pot of salted water until al dente, usually about 8-10 minutes. Drain and rinse under cold water.
- Step 2: While the pasta is cooking, chop the cooked chicken into bite-sized pieces and halve the cherry tomatoes.
- Step 3: In a large mixing bowl, combine the cooled rotini pasta, diced chicken, halved cherry tomatoes, and chopped romaine lettuce.
- Step 4: Pour the Caesar dressing over the pasta mixture and toss gently until well coated.
- Step 5: Sprinkle the grated Parmesan cheese over the salad and mix until evenly distributed.
- Step 6: Season with salt and pepper to taste, and serve topped with croutons and optional parsley.
Notes
This salad can be prepared ahead of time and stored in the refrigerator for up to 3 days. Keep the croutons separate until serving to maintain their crunch.
