- Step 1: Begin by boiling a large pot of salted water. Once the water is at a rolling boil, add the 8 ounces of rotini pasta. Cook according to the package instructions, typically around 8-10 minutes, or until al dente. Drain the pasta using a colander and rinse it under cold water.
- Step 2: While the pasta is cooking, chop the 1 cup of cherry tomatoes in half, 1 cup of cucumber into diced pieces, and 1 cup of bell pepper into small cubes. Finely chop 1/2 cup of red onion as well. Place them into a large mixing bowl.
- Step 3: Add 1 cup of shredded cheddar cheese and 1/2 cup of crumbled cooked bacon to the bowl of veggies. The cheese will melt slightly with the warmth of the pasta.
- Step 4: In a separate bowl, whisk together the dressing ingredients: 1/2 cup of mayonnaise, 1/4 cup of sour cream, 2 tablespoons of apple cider vinegar, 1 tablespoon of Dijon mustard, 1 tablespoon of sugar, and salt and pepper to taste.
- Step 5: Once the pasta has cooled completely, add it to the bowl with the vegetable, cheese, and bacon mixture. Pour the dressing over the entire mixture. Using a spatula or wooden spoon, gently toss everything together until well coated.
- Step 6: Cover the salad with plastic wrap or a lid and refrigerate for at least 1 hour before serving.
