  • 8 oz rotini pasta
  • 1 cup cherry tomatoes halved
  • 1 cup canned black beans rinsed and drained
  • 1 cup corn kernels fresh or canned
  • 1/2 cup red bell pepper diced
  • 1/2 cup red onion diced
  • 1/2 cup cheddar cheese shredded
  • 1/4 cup fresh cilantro chopped
  • 1/4 cup olive oil
  • 2 tbsp lime juice
  • 1 tsp chili powder

Method
 

  1. Step 1: Begin by bringing a large pot of salted water to a boil. Add the rotini pasta and cook according to the package instructions until al dente, about 8-10 minutes. Once cooked, drain the pasta in a colander and rinse it under cold water.
  2. Step 2: While the pasta is cooking, prepare your vegetables: chop the cherry tomatoes, dice the red bell pepper and red onion, and rinse and drain the black beans and corn kernels.
  3. Step 3: In a large mixing bowl, combine the cooled pasta with the prepared vegetables, shredded cheddar cheese, and chopped fresh cilantro. Toss until evenly distributed.
  4. Step 4: In a small bowl, whisk together the olive oil, lime juice, chili powder, and salt and pepper to taste.
  5. Step 5: Pour the dressing over the salad mixture and gently toss to combine, ensuring all ingredients are well coated.
