- Step 1: Preheat your oven to 350°F (175°C).
- Step 2: Grease and flour a 9x5-inch loaf pan.
- Step 3: In a large mixing bowl, combine the grated zucchini, granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract. Mix well until everything is thoroughly combined.
- Step 4: In a separate bowl, whisk together the all-purpose flour, baking soda, baking powder, ground cinnamon, ground nutmeg, and salt.
- Step 5: Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Step 6: If you’re using nuts, fold in the chopped walnuts or pecans at this stage.
- Step 7: Pour the batter into your prepared loaf pan and spread it evenly.
- Step 8: Place the loaf pan in the preheated oven and bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
- Step 9: Allow the bread to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
Notes
This bread is delicious as is, but you can make it vegan by substituting eggs with flax eggs or applesauce and using a plant-based oil. Store in an airtight container at room temperature for up to 3 days, or freeze for longer storage.
