- Step 1: Preheat your oven to 350°F (175°C).
- Step 2: In a large mixing bowl, combine the sour cream, softened cream cheese, melted butter, and ranch seasoning mix. Mix until smooth and creamy.
- Step 3: Add the halved baby potatoes to the mixing bowl and toss gently to coat them evenly with the creamy mixture.
- Step 4: Grease your baking dish and pour the coated potatoes into it, spreading them out evenly.
- Step 5: Sprinkle the crumbled bacon and shredded cheddar cheese over the top of the potatoes.
- Step 6: Cover the baking dish with aluminum foil and bake for 30 minutes.
- Step 7: After 30 minutes, remove the foil and bake for an additional 15-20 minutes until the cheese is bubbly.
- Step 8: Once tender, garnish with sliced green onions and serve immediately.
Notes
This dish can be prepared in advance and refrigerated. Just bake it when you’re ready to serve for a delicious side dish.
