- Step 1: Preheat the oven to 375°F (190°C).
- Step 2: Bring a large pot of salted water to a boil. Add the orzo pasta and cook according to the package instructions until al dente (8-10 minutes). Drain and set aside.
- Step 3: In a large skillet, heat olive oil over medium heat. Add diced onion and sauté for about 5 minutes until translucent. Add minced garlic and cook for an additional minute.
- Step 4: Stir in the chopped spinach and cook for 2-3 minutes until wilted.
- Step 5: In a large mixing bowl, combine the cooked orzo with the sautéed vegetables. Add ricotta, half of the mozzarella, Parmesan, salt, black pepper, and red pepper flakes (if using). Mix well.
- Step 6: Spread half of the marinara sauce on the bottom of a baking dish. Pour the orzo mixture over the sauce and spread evenly.
- Step 7: Top with the remaining marinara sauce and sprinkle the remaining mozzarella cheese over the top.
- Step 8: Cover with aluminum foil and bake for 20 minutes. Remove the foil and continue baking for an additional 10 minutes or until cheese is bubbly and golden.
- Step 9: Let cool for a few minutes before serving.
Notes
Make it vegan by substituting with plant-based cheeses and marinara sauce. This dish can be prepared in advance and stored in the refrigerator before baking.
