  • 1 cup orzo pasta
  • 2 tbsp olive oil
  • 2 large onions thinly sliced
  • 2 cloves garlic minced
  • 1 tsp fresh thyme leaves
  • 1 cup vegetable broth
  • 1 cup heavy cream
  • 1 cup Gruyère cheese grated
  • 0.5 cup breadcrumbs
  • 2 tbsp unsalted butter melted
  • Fresh parsley

Method
 

  1. Step 1: Preheat your oven to 350°F (175°C).
  2. Step 2: In a large pot of boiling salted water, cook the orzo pasta until al dente, about 8-10 minutes. Drain and set aside.
  3. Step 3: In a large skillet, heat olive oil over medium heat. Add sliced onions and caramelize for 20-25 minutes until golden brown.
  4. Step 4: Stir in minced garlic and fresh thyme, cooking for an additional 1-2 minutes until fragrant.
  5. Step 5: In a mixing bowl, combine cooked orzo, caramelized onions, vegetable broth, heavy cream, half of the grated Gruyère cheese, salt, and pepper. Mix well.
  6. Step 6: Pour the mixture into a greased baking dish and spread evenly.
  7. Step 7: Sprinkle remaining Gruyère cheese and breadcrumbs on top, then drizzle melted butter over the breadcrumbs.
