- Step 1: Preheat your oven to 350°F (175°C).
- Step 2: In a large pot of boiling salted water, cook the orzo pasta until al dente, about 8-10 minutes. Drain and set aside.
- Step 3: In a large skillet, heat olive oil over medium heat. Add sliced onions and caramelize for 20-25 minutes until golden brown.
- Step 4: Stir in minced garlic and fresh thyme, cooking for an additional 1-2 minutes until fragrant.
- Step 5: In a mixing bowl, combine cooked orzo, caramelized onions, vegetable broth, heavy cream, half of the grated Gruyère cheese, salt, and pepper. Mix well.
- Step 6: Pour the mixture into a greased baking dish and spread evenly.
- Step 7: Sprinkle remaining Gruyère cheese and breadcrumbs on top, then drizzle melted butter over the breadcrumbs.
- Step 8: Bake in the preheated oven for 25-30 minutes until golden brown and bubbly.
- Step 9: Let cool slightly, garnish with fresh parsley if desired, and serve warm.
