  • 1 cup orzo pasta
  • 1 head cauliflower chopped into florets
  • 2 tbsp olive oil
  • 1 cup buffalo sauce adjust based on spice preference
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup cream cheese softened
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and pepper to taste
  • Fresh parsley, for garnish

Method
 

  1. Step 1: Preheat your oven to 400°F (200°C).
  2. Step 2: In a large pot, bring salted water to a boil and add the orzo pasta. Cook according to the package instructions until al dente, usually about 8-10 minutes. Once cooked, drain the orzo in a colander and set aside.
  3. Step 3: In a large mixing bowl, combine the chopped cauliflower florets with olive oil, buffalo sauce, garlic powder, onion powder, salt, and pepper. Toss until the cauliflower is evenly coated.
  4. Step 4: Spread the cauliflower mixture onto a baking sheet and roast for 20-25 minutes.
  5. Step 5: In a large bowl, mix together the cooked orzo, roasted cauliflower, softened cream cheese, and half of both the cheddar and mozzarella cheeses. Stir until well combined.
  6. Step 6: Grease your baking dish, then transfer the orzo and cauliflower mixture into it. Spread it out evenly and sprinkle the remaining cheddar and mozzarella cheese on top.
  7. Step 7: Bake for an additional 15-20 minutes, or until the cheese is melted and bubbly.
  8. Step 8: Remove from the oven and let it cool for a few minutes. Garnish with fresh parsley if desired.

Notes

The Buffalo Cauliflower Cheesy Orzo Bake can be prepared ahead of time and stored in the fridge. It can also be frozen for later use.
