- Step 1: Preheat your oven to 400°F (200°C).
- Step 2: In a large pot, bring salted water to a boil and add the orzo pasta. Cook according to the package instructions until al dente, usually about 8-10 minutes. Once cooked, drain the orzo in a colander and set aside.
- Step 3: In a large mixing bowl, combine the chopped cauliflower florets with olive oil, buffalo sauce, garlic powder, onion powder, salt, and pepper. Toss until the cauliflower is evenly coated.
- Step 4: Spread the cauliflower mixture onto a baking sheet and roast for 20-25 minutes.
- Step 5: In a large bowl, mix together the cooked orzo, roasted cauliflower, softened cream cheese, and half of both the cheddar and mozzarella cheeses. Stir until well combined.
- Step 6: Grease your baking dish, then transfer the orzo and cauliflower mixture into it. Spread it out evenly and sprinkle the remaining cheddar and mozzarella cheese on top.
- Step 7: Bake for an additional 15-20 minutes, or until the cheese is melted and bubbly.
- Step 8: Remove from the oven and let it cool for a few minutes. Garnish with fresh parsley if desired.
