- Step 1: Preheat your oven to 375°F (190°C).
- Step 2: Line a baking sheet with parchment paper.
- Step 3: In a large mixing bowl, combine the chopped rhubarb, flour, granulated sugar, baking powder, baking soda, salt, and ground cinnamon. Use a whisk to mix them well.
- Step 4: In another bowl, whisk together the buttermilk, egg, vanilla extract, and melted butter.
- Step 5: Pour the wet mixture into the dry ingredients. Using a spatula, gently fold the mixture until just combined.
- Step 6: Using a spoon or an ice cream scoop, drop spoonfuls of the batter onto the prepared baking sheet.
- Step 7: Place the baking sheet in the preheated oven and bake for 15-20 minutes, or until the fritters are golden brown.
- Step 8: While the fritters are baking, whisk together the powdered sugar, milk, and vanilla extract in a small bowl until smooth.
- Step 9: Once the fritters are done, let them cool slightly on the baking sheet for a few minutes, then transfer them to a cooling rack. Drizzle the sweet glaze over the fritters while they are still warm.
